Week Five of CSA

This week’s share is an interesting one:

Beets, Onions, Cilantro, Strawberry Jam, and Eggs

The big problem is the beets… I have never liked them, so what can I create that will make them tolerable?

Please, please, please leave me some suggestions! Or, better yet, come to Lynchburg and take them off my hands.

  1. I have never been a fan of beets myself…to be honest, they taste like dirt! But after being a subscriber to my CSA for almost 2 years, and receiving tons of beets, I have had to find some recipes that would change my mind.   2. My best beet recipe is to grate them and then mix them with herbs and cheese and saute them as patties. The recipe is on this link.
